Watermelon, black olive & feta salad

This is the easiest, most refreshing salad, fab on its own, or as a side. The combination of watermelon, black olive & feta is just inspired. Trust me on this.


Serves 6 (as a side)


Ingredients:


  • 1/4 Watermelon - cut into big cubes (If you want to feed more people or make some to keep spare then use more)

  • 3 big sticks of feta (a little less than half a pack)

  • 70g (1 packet) of stoned black olives (I use the Crespo packs you can get from most shops)

  • 2 large handfuls of dark salad greens (rocket or watercress is best)

  • Handful of seeds - I like black sesame seeds but you could have sunflower or pumpkins seeds

  • Juice of 1 lime or lemon

  • Olive oil

  • Handful of chopped mint

  • Salt & pepper


Method:

  • Cut your watermelon into big cubes, I like to remove the seeds but if you can’t be bothered then don’t!

  • Lay out your salad greens onto a large flat platter

  • Top with watermelon

  • Roughly chop your black olives and sprinkle onto salad

  • Crumble over your feta

  • Sprinkle with your seeds and mint

  • Squeeze over your lime, drizzle with olive oil & season with salt & pepper

  • Give it a good toss before serving
